Gluten-free apple cake

Ever since I discovered that I am gluten intolerant, the thing I miss most is a good piece of apple cake. This recipe doesn’t make me regret the cake my mother used to make for me when I was little.

Lots of cinnamon, lemon peel, and dates instead of sugar which give a really good flavour…try it and let me know!

Torta di mele senza glutine

Ingredients

  • 150 g rice flour
  • 50 g cornstarch
  • 30 g melted butter
  • 3 dates
  • 2 eggs
  • 60 g milk
  • 1 sachet of baking powder
  • Cinnamon to taste
  • The grated rind of an untreated lemon
  • 2 apples

Preparation methodology

Separate the egg whites from the yolks and whisk together with the dates that you have previously blended with the milk. Add the butter and, while continuing to mix, incorporate the flour, baking powder, cinnamon and grated lemon rind. Finally, add the egg whites beaten until stiff with a pinch of salt.

Slice of apple cake

Put half the dough in the pan, a layer of sliced apples, the remaining dough and the remaining apples in a radial pattern.

Bake in a preheated oven at 180 C for 35 – 40 minutes or until the toothpick comes out dry.

Combine with a good homemade custard.
