L\u2019alimento cuoce grazie al vapore che si crea con<br \/>l\u2019evaporazione del liquido, con il calore della fonte termica e con il succo rilasciato dalle verdure dopo il contatto con il sale. Il liquido pu\u00f2 essere un fondo bianco (brodo vegetale) oppure solamente acqua. Durante questa cottura le parti fibrose dei vegetali si inteneriscono e la perdita dei succhi \u00e8 limitata.<br \/><br \/>La brasatura, invece, \u00e8 una cottura prolungata di un vegetale a calore dolce e con coperchio. Viene immerso in una piccola quantit\u00e0 di liquido concentrato (vino, riduzione di fondo bruno vegetale o riduzione di fondo bianco vegetale)\u00a0dal quale assorbe i sapori per diffusione. <br \/>Solitamente il cibo da cuocere viene prima rosolato all\u2019esterno e poi la cottura termina in un contenitore chiuso.<\/p>\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element ricetta utilizzo dei peperoni che danno colore e un sapore vegetale al piatto, una ricotta che dona grassezza e rotondit\u00e0 alla preparazione e una crema di basilico per rinfrescare il tutto con il caratteristico profumo di questa erba aromatica.<\/em> &#8220;<\/p><p>Un piatto semplice\u00a0e veloce ma che racchiude al suo interno un boquet di sapori e profumi particolarmente ricco.<\/p><h6>\u00a0<\/h6><h6><strong>Ingredienti per quattro persone:<\/strong><\/h6><p>Per i peperoni:<\/p><ul><li>1 peperone giallo;<\/li><li>1 peperone rosso;<\/li><li>1 peperone verde;<\/li><li>1 spicchio d\u2019aglio;<\/li><li>sale;<\/li><\/ul><p>Per la ricotta:<\/p><ul><li>200 gr di ricotta;<\/li><li>sale;<\/li><li>pepe;<\/li><\/ul><p>Per il pesto di basilico:<\/p><ul><li>qualche foglia di basilico;<\/li><li>60 gr di olio extravergine di oliva;<\/li><li>sale;<\/li><li>1 cubetto di ghiaccio;<\/li><\/ul><p>Decorazione:<\/p><ul><li>qualche foglia e Tagliali a cubetti regolari e inseriscili in padella con uno spicchio d\u2019aglio e il sale. <br>Copri con il coperchio e lascia cuocere a fiamma moderata per circa dieci minuti. Aggiungi la ricotta in un recipiente con sale e pepe e frulla con il frullatore ad immersione fino ad\nottenere una crema liscia. Inserisci il composto in una sac \u00e0 poche.<br>\nImmergi le foglie di basilico in acqua bollente salata. <br>Cuocile per qualche minuto e lascia raffreddare.<br>\nStrizzale e versale in un contenitore assieme all\u2019olio, al sale e ad un cubetto di ghiaccio.
